chocolate walnut protein cups

going to be real - I kept trying to take pictures of these mini-cups, but could not stop eating the props!! they're the perfect combination of nuts (good-fats) + protein. Oh, did I mentioned they're paleo, gluten-free, and vegan?

· gluten free,paleo,vegan

the ingredients

- STREUSEL-

1/4 cup coconut sugar

1/3 cup walnuts

3 tbs oat flour (3 tbs blended rolled oats) (for paleo option, can sub 1.5 tbs coconut flour)

3 tbs coconut oil

dash cinnamon

- CUPS -

1 cup walnuts

8 dates

- FILLING -​

1 scoop flavored protein powder (preferably chocolate)

2 tbs pbFit® powder

2 tbs unsweetened cacao powder

½ tsp baking powder

¼ cup nut milk

the process

- STREUSEL -

  • mix together. 
  • sprinkle semi-close together on a parchment paper lined baking sheet.
  • bake at 350 for 12 minutes, shifting mixture around periodically with fork
- CUPS -
  • add dates to bowl of boiling water. Let sit for 5 minutes.
  • remove pits from dates. Place pitted dates + walnuts in food processor. Blend well.
  • line a cup cake tray with silicone cupcake holders.
  • spread date / walnut mixture along with bottom + sides of the holders.
  • refrigerate for 10 minutes.

- FILLING -​

  • mix all ingredients in microwave-safe mug.

  • microwave for 25 seconds.

to assemble

  • remove cups from fridge. 
  • drop a dollop (~1 tbs) of the filling mixture into each cup.
  • sprinkle with desired amount of streusel (might have left over!). 
  • eat immediately, or refrigerate cups for 3-4 days!!
