english muffin - single serve

don't feel like buying an entire sleeve of english muffins?! same...so I've created a super easy, homemade english muffin using ingredinets that you most likely have lying around your pantry!

· gluten free

ingredients

  • 1/4 cup oat flour (can sub almond flour)
  • 1 tbsp protein (can sub coconut flour)
  • 1/8 tsp baking soda
  • dash of salt
  • dash of cinnamon
  • 1 tsp coconut oil
  • 1 egg (can sub flax egg)

how to make...

  1. mix dry ingredients...then add in oil and egg! mix well.
  2. spray/drizzle a small ramekin with olive / avocado oil.
  3. microwave 40-55 seconds in a small ramekin.
  4. cut in half
  5. toast, if desired
  6. add desired toppings

topping ideas

  • savory: egg, avocado, tuna, cheese, bacon
  • sweet: nut butter, banana, honey, cinnamon
