healthier carrot cake

balanced carrot cake - perfect for a pot luck style event, dessert, and/or breakfast 🤗

wet
1/2 cup (heaping) shredded carrots 🥕
1/4 cup diced apples 🍎
1/4 cup Greek yogurt 🍦
1/2 cup apple sauce
1.5 tbs coconut oil, melted 🥥
dash lemon juice 🍋

MIX THESE ^^ WELL!
dry
dash cinnamon
dash nutmeg
1 scoop protein, I used whey 💪🏽
1/2 cup oat flour 🥣
1/2 tsp BP
1/2 tsp BS
1 tbsp coconut flour 🥥

MIX THESE ^^ INTO THE WET INGREDIENTS!

frosting

dash coconut milk/ any milk (as needed)
1/2 cup Greek yogurtdash nutmeg
1/2 cup All American Nutrition Cheesecake Icing (CODE: ktleo) - it's a must

toppings: totally optional, but I topped with some more shredded carrots and walnuts.

 

BAKE AT 375 FOR 35 MINUTES. I USED A 6.5" ROUND PAN SPRAYED WITH OLIVE OIL.**

**note: if you use a wider pan, you would cook it for less time. I don't recommend using anything smaller than the 6.5" round pan :)
