1/2 cup sweet potato puree (can sub with butternut squash OR pumpkin)
1 cup liquid egg whites
2 bananas (one to mash up in mixture, one to drop in as 'sunkin treasure')
1/2 cup Vanilla protein powder (50% Gainful custom protein powder: here)
1/2 cup coconut flour
1/2 cup rolled oats
1 tsp cinnamon
mixins of choice (nuts, chocolate chips, dried strawberries, raisins, coconut, etc.).
- preheat oven to 325, and line a standard loaf pan with parchment paper (or spray with avo oil)
- mash one of the two bananas in a medium bowl. mix mashed banana with other wet ingredients together (i.e.: puree & egg whites).
- next, pour the dry ingredients (protein powder, coconut flour, rolled oats, cinnamon, salt) into the same medium bowl. fold in choice-mix-ins.
- bake for 30-35 minutes (until you can pull a knife or toothpick out cleanly).
