Zucchini Cabbage Fritters

These taste incredible with my homemade beet dip or homemade Tzatziki! You can even use them as buns for your sandwiches or burgers.

INGREDIENTS

  • 1/4 - 1/3 cup oat flour
  • 1 egg
  • 1/2 medium zucchini, shredded
  • 1 cup green cabbage, boiled until soft
  • Salt, pepper, garlic powder, parsley (1 tbsp), 1 tbsp nutritional yeast

RECIPE

  1. finely chop cabbage into 1/4 inch long shreds.
  2. toss into a pot with ~6 cups of water. bring to a boil for 3 minutes (until cabbage is soft). 
  3. while this is boiling, shred the zucchini, then dry the shredded zucc with a towel.
  4. once cabbage is softened, strain and place in a large bowl. add all remaining ingredients.
  5. roll into balls, then press flat
  6. on medium heat, drizzle 1 tsp olive oil on large pan, sear each flattened cabbage ball until golden brown
  7. Bake 400 degree for 27 minutes!
